I have a unique Apple iPad problem?

At work we use an Apple iPad for checkout, inventory, etc. The previous lead/manager had set it up and used her own Apple account (rather than creating a company account everyone could access.) She's been fired (gee) and now we can't update the iPad or the company iPhone and she isn't allowed near the store so we can't have her fix it.

In short, how do I remove or replace the account on the iPad without knowing the previous account's password?
We can't update any of the apps or install anything. It's becoming a problem.
